Curry Lentils
Healthy and delicious side dish or main dish.
1 cup lentils
2 ½ cups vegetable broth
1 large onion, chopped
3 cloves garlic, diced
1 tbsp. olive oil
1 tbsp. hot curry powder
1 tsp. curry powder
1 tsp. coriander
1 tsp. cumin
½ tsp. turmeric
¼ tsp. paprika
Dash of cayenne pepper
Salt and Pepper
1) In sauce pan, heat olive oil on medium-high heat. Add onions and sauté
a few minutes. Add garlic and sauté an additional minute.
2) Add all spices and stir.
3) Add lentils and vegetable broth. Bring to a boil and then reduce heat
to medium-low heat. Simmer for about 20 minutes until lentils are tender.
4) Serve with Basmati rice or as a side dish for your favorite entree.
