Spinach with Garlic
This is a super-easy side dish to prepare and everyone
loves it.
10 -12 cups of baby spinach
1/4 cup of olive oil
6-8 cloves of garlic, minced
1/3 cup of water
1) In a deep, large kettle, add half of the olive oil and bring to medium
high heat.
2) Add the minced garlic and quickly stir fry (a minute or less--don't
burn it).
3) Add the spinach in bunches, stirring it from the bottom. Add remaining
olive oil and water and continue stirring. Spinach will quickly wilt down.
4) Remove from heat once spinach wilts.
