Spinach Casserole
My mom makes this casserole for family parties.
2 pkgs. Frozen chopped spinach (cooked and drained)
2 cloves garlic, chopped
1 onion chopped
2 tbsp. olive oil
1 organic, free range egg or 3 tbsp. egg whites
1 cup herbed stuffing mix
½ cup parmesan cheese
½ cup grated low-fat, Monterey jack cheese
½ cup low-fat sour cream
Salt & pepper, to taste
Preheat oven to 350 degrees
1) Saute onion in olive oil for a few minutes. Add garlic and sauté
a minute more.
2) Add spinach and stir.
3) In separate large bowl, stir together egg, stuffing mix, cheeses, sour
cream, salt & pepper.
4) Bake at 350 degrees in a 9 X 13 inch glass baking dish for about 30
minutes.
